  1. Happy early birthday! I put your birthday celebration on my calendar for the 30th! Not sure how to officially sign up for it, but I’ll follow the link that day and hopefully see ya there!
    I’d love to swap some vegan recipes! Here is one of my favorite sweet treats for ya:
    -15 dates (about 1 cup) soaked and mashed
    -1/4 cup coconut milk
    -1/4 cup coconut oil
    -1/2 to 1 tsp pink Himalayan sea salt
    – 1 tsp vanilla extract
    – lightly coated/dusted by rolling each ball in coconut flour
    Chocolate Coating
    – 1/4 cup cocoa powder
    1/4 cup coconut oil
    -2 Tbs honey (unless you’re super vegan, in which case substitute maple syrup or agave)
    Soak the dates in hot water for at least 15 minutes, then strain (reserve date water. It’s yummy and healthy!), remove pits, and mash with a fork. Add in the coconut milk, melted coconut oil, vanilla, and salt. Mush it all together. Then refrigerate for 3 hours to firm up.
    Take out the date mix and roll into little balls…whatever size you like. I think there is a lot of creative opportunity here. You could add seeds, nuts, fruit, etc. whatever you want to be the center of your caramel.
    Then pour coconut flour onto a plate, roll each ball to coat, and set on a new plate or tray, as you return the date balls to the fridge for another 30 min.
    Melt on the stovetop the cocoa powder, coconut oil, and honey. This is your chocolate coating.
    After making this several times, I finally discovered the secret to coating the date balls with the melted chocolate coating-use an unraveled paper clip to poke and dip into the mix!
    Coat each ball and then return to plate or tray. Put back into fridge or freezer until ready to eat.
    Enjoy your healthy sinful tasting chocolate caramel!

      One of my faves…grilled cauliflower
      So easy
      So simple
      So good!
      1 large head of cauliflower sliced thick 1″ slices from top to core as even as possible to maintain all the clusters
      In a zip top bag add cauliflower, Himalayan salt, pepper, red pepper flakes to taste and coat lightly
      Remove from bag
      Place on hot grill
      on med to med high let grill marks happen!
      About 10 minutes or 5-6 minutes per side
      Remove from grill
      Microwave another 2 minutes if needed to soften if desired
      Serve with your favorite dipping sauce, BBQ sauce, or vegan dressing
