Greetings! 
Last month's article about eating animals stirred up more emotion and controversy than any other topic I have covered.

Hundreds of emails came in sharing personal stories and defining moments from both vegetarians and meat eaters. I appreciate everyone who took time to write in and apologize we could not respond to all of them.


The majority of the emails were in favor of either a vegetarian or vegan diet or meat eaters who have cut way back their meat intake.  

I was also pleased to hear how many of you seek out 'free range' or 'cage free' products whenever possible.




Factory farming is a nightmare and one person can make a difference.  



If we would just switch out one animal product and support humane farming we can help make conditions better for the animals who suffer.

It's really not difficult to learn. Once you know the basic steps it's just a matter of practicing until you gain confidence.

Refreshing Artichoke Bean Salad
  
Garbanzo beans are high in protein and low in fat and calories.  

Substitute any other beans such as white cannellini if desired.


1 15 oz can of garbanzo beans drained & rinsed
1 large can of artichoke hearts drained, rinsed and chopped
1/2 C chopped kalamata olives 
1/2 C minced red onion 
2 sprigs of fresh thyme removed from stems and minced
2 T extra virgin olive oil 
6-8 T red wine vinegar
2 T lemon zest
Salt & pepper to taste

Optional: chopped tomatoes or red peppers

In a large mixing bowl add all ingredients and combine well. Cover and chill for at least 30 minutes. Stir well and serve cold on a bed of crisp lettuce or as a side dish.
